I’m on call tonight, but all of the SD meals today were delicious! This morning’s breakfast we’ve had a couple of times; it’s called “baked eggs” in the SD book; but we like to call them “Pizza Eggs!”
Pizza Eggs
1 medium to large tomato
1/4 cup mozzarella
basil (dry or fresh; I used dry)
onion powder
garlic powder
2 eggs
parmesan cheese, grated
salt & pepper
Preheat oven to 375 dregrees. Spray 2 small oven safe bowls (like cereal sized) with cooking spray. Slice a medium to large tomato into slices (like they use on sandwiches, nice and thin); place in equal amounts in both bowls. Split the mozzarella and sprinkle over both bowls. Sprinkle basil, onion powder, garlic powder, and some salt & pepper over the tomatoes. Crack 1 egg over the tomatoes in each bowl; sprinkle with parmesan cheese & more salt & pepper, if desired. Bake at 375 degrees for 20-30 minutes, or until eggs are fully cooked (15-20, if you like them runny). Enjoy- they taste like pizza, which is actually amazing for breakfast!

Pizza for breakfast, you say? Sounds interesting! I have seen the baked eggs recipe in the book…I'll have to give it a shot!
