It’s already the end of July!! Where did summer go?! I realize it’s been several days since I’ve blogged- half of that, Chris and I were both getting over pneumonia, and the other half, we were super busy! Of course, work is the same as it has been for a while. But this past weekend was amazing!! My best friend came up to visit Chris & I for the weekend!
After we picked blueberries on a local blueberry farm, we made a fresh blueberry (whole wheat) pie. With fresh whipped cream. AWESOME!
Blueberry Pie
1 single frozen whole wheat pie crust
1 qt. fresh blueberries
1 Tbsp. agave syrup
4 tsp. whole wheat flour
1 Tbsp. butter
1/4 c. rolled oats
1/2 Tbsp. raw sugar
Preheat oven to 400 degrees. Let the frozen pie shell sit out for about 20 minutes, or until defrosted. In a large bowl, add blueberries, agave, 1 tsp. of flour; mix. Pour all of the berries into the pie shell.
In a medium bowl, add butter, remaining flour, oats, and sugar. Blend with a fork until crumbly. Crumble the topping over the blueberries (you can press it down if it seems too loose). Bake at 400 degrees for 40 minutes, or until bubbly. Cool for 20 minutes before serving.
It’s a perfect summer dessert- especially with a dollop of whipped cream on top!
